Mihai, in fact it all depend.. if I use the scanner of photograph it.. in the last case I can get some reflections, I try to avoid them by photogrphing in my north room, with a reflector to counter-balance the light coming from outside, if they are still some, I brush them away.. with the scanner, I get tiny reflections sometimes, but overall, I try to flatten the food, this is why I am doing right now a flat brioche the size of mt oven, much better results than taking a brioche in photo, same for creams and toppings, no way to photograph, so a thick coat directly on the scanner window does wonder...(second scanner, the first one had a leak... hehe) ... then I do a ref map, exactly.. with food you have to have a ref map.. but also I output a nice normal map from Mudbox... it is sometimes challenging, but with the time I developped some good PS techniques..
