Hmm...taking photography as a reference it should not make any direct difference.

Changing ISO can allow you to use another aperture which consequently impacts DOF, sure.
But as long as you neither change fstop or the camera target DOF should remain unchanged.

It changes the shutter speed... If you have a moving object in your scene, or you have an animation but chose not to use the rotary shutter setting it will effect the motion blue of the camera/object.
The iso is the way to adjust exposure without any other impact.
