APPLES:
depends on the apples, where they were bought, and if they have been waxed. If they are to have such a broad specular you need both a bump map AND some sort of very subtle grunge map in the specular channel (depends on the 3D app as to where to put that map)
I think most apples bought in a store will be almost as shiney as plastic, but the surface irregularities will be really important with that much sheen.
edit: I also should mention that most apples have bumps on the bottom... at least the ones which are heart-shaped, like the ones in your photos. Also there should be some angularity on the vertical, those apples are usually not round around the equator but more faceted. Of course the granny smith variety is more round, and perhaps would be easier to pull off... mcintosh, granny smith, spartan, etc... they are all roundish. The golden delicious, and red delicious (like the ones in your photo) are more lumpy and angular... Sorry... I think I'm getting a little OCD here.
