Attached are glass bottle images.

I'm trying to figure out if I should be seeing more caustics on the surface outside the bottle.

I have emitters to the left and right of the bottles and an angled emitter on top.

It depends on the relative size of the emitters in your scene. Small, bright emitters = more visible caustics.

The glass sits in an area (base) I'd say is 300 mm x 300 mm. The emitters are about 300 mm x 300 mm placed just off the edge to the left and right of the base.

To get visible caustic patterns my guess is that you have to reduce the physical size of the emitter to 10% or less of the current size.

I went back and added additional, smaller, emitters and upped the wattage -- seems to be working better. Will post.

Wow, that's a very good illustration showing the effect of different sized emitter on an object.

I think the other issue on the glass objects I've created is that all the edges are not rounded (although the interior of the bottle holding the liquid is round) which seems to minimize the caustics.
