I'm working with the Rhino-Maxwell plugin and I noticed that metals can only be chosen among presets, but there's no way to have a metal with a chosen diffuse and specular color... is it possible to do that in Maxwell or you must switch do dieletrics?

nope, not at the moment. try using a plastic material instead (you can easily control reflectivity, glossiness, diffuse and specular color there).
