I caught hundreds of them in Sardinia and when caught outside their hole this is the way they behave.
The other surprising thing that thy do is that they carry little stones and shells and form a hemicicle right out the hole. When you approach them they pull their tentacles out, grab stones and shells with their suction caps and then they retire inside the hole building a kind of barricade of stones at the entrance.
Plus they have another superpower: even an octopus that weights a Kilo, can sguish through a hole not bigger than a centimeter.
They are smart also, can find logical solutions to problems (they learn to open a bottle with food inside by screwing off the cap...!) and, last but not least, they are able to learn it even from their similes. If an octopus has discovered after a certain number of tries the way to do a thing and another one can actually see the first one doing a couple times, it learnes to do it almost immediatly.
If only they were not sooooo good sliced and boiled...
