Yes. 4x GTX580 on an overclocked SR-2 with dual X5680 CPUs. You'd need a 2000 watt PSU. Or more likely, dual 1200watt units.

Not to mention an extra air conditioner...

Personally I would go for an GTX 470 if you want it all in one package. 1GB RAM of RAM is not worth trying though except very easy scenes. Generally I found that textures eat up more memory than geometry.
If you plan to do serious GPU computing with Iray make sure to have a steady airflow through your case, it will be very noisy and hot. Also do not expect wonders from a single GPU coming from the 980X and Maxwell that you are probably going to compare it to. (that's why they usually use a triple or quad SLI GTX 480 setup to render their "scenes" in their demos... :) )

The 580 is a good choice Brian. I don't think you would need to overclock it though, since it's basically the top of the line and you generally overclock to get more performance out of a cheaper card for things like gaming. At factory settings, the 580 runs cooler and is more energy efficient than the 480. 8)
