In V3, where can I fond the camera parameters to hide and unhide a camara an also to choose the kind of projection?

For hiding, the little dot to the left of the lock icon in the Camera list panel lets you hide/unhide a camera in the viewport. Works in the same way as for the object list panel.

If by projection you mean an orthographic camera, you choose that from the dropdown in the camera parameters: Thin lens, pinhole, ortho etc. Have a look in the docs please...
