When opening a file, or after some interactions, the texture decal mode viewport display displays the MXM's selected texture wrong, but FIREs/renders correct. When dragging the material onto the object again, the display is correct, but all projector adjustments one did before are lost and have to be remembered and re-entered anew.

Also, the texture display is very low-res compared to that of modern render softwares.

It's strange. What happens if you reselect the texture by using this button?

Regarding the texture resolution, you can set it globally from the Preferences > Viewport Rendering > Performance group > Texture Resolution:
