Is it not possible anymore to hold and drag the central mouse button to change numerical values of pivot position etc?

It's still possible but the cursor has to be over the arrow buttons, not the numeric field. You can also scroll with the mouse wheel (without pressing it) in the numeric fields to change the values by 1.
