I can't remember when it started but Maxwell Render has started defaulting to opening with nothing but the rendered image visible. I can switch all the panels (ie: preview, render options etc) back on but how can I get it back to launching in the default state?

Maybe you pressed H which hides/unhides the panels. You can press H again to bring them back, close Maxwell and reopen it. It should always open in the last state it was in. You can also press F for full screen mode.

It was the H key, thanks Mihai. I was switching them all back on via the Window menu but whenever it re-launched they were hidden again.
