It would be cool if there were some way to take movies of shaved objects 'evolving' and turn it into quasi-procedural 3D textures

Nice!
Not really what you intend but I always thought that it should be doable to combine creating sliced veneer with high quality scanning.
That would yield endless amounts of texture data as a by-product.
