So what sort of PC is suited to GPU rendering... what do I need to look out for?

I have no idea about that but don't buy amd. Maxwell 4 work with nvidia

From what I learned from various users here, one needs 1. a GPU with Nvidia's CUDA cores (more = better) and 2. sufficient VRAM to be able to hold the entire scene in memory (model data & textures). Apple computers are not a good choice (AMD GPUs) so one buys or builds something else or swaps out one's existing AMD GPUs from one's PCs (the cost is not that high, considering the speed gain).

That's what I understood so far.
